Thai Iced Tea, trial one.
My first attempt to recreate the Thai iced tea that I enjoy at restaurants. I was being super imprecise with my measurements:
~3/4 cup Thai tea 
~4 cups boiling water
~2 tablespoons sugar
Splash of half and half
I brought the water to a boil, cut the flame, and then soaked the tea using this sock-like strainer. The tea steeped for about 10 minutes, I added my sugar, and then put it into the fridge till it was cold. I poured some into a cup over ice (I didn’t measure) and added half and half until it resembled a creamy orange color.
A lot of recipes on the intarwebs said to do 1+ cup of thai tea in 6 cups of water, which seemed a bit excessive, but I think it’s correct. My tea wasn’t as strong as would have liked it. Also it wasn’t super sweet, so if you’re into that sort of thing (I’m not), go crazy with the sugar. Other than that, it still had the awesome Thai iced tea taste.
